Wildebeest are making major changes to their dining programme by turning their downstairs space into an Old Fashioned bar called 'Underbelly'. "We'll be serving 14-18 variations on the Old Fashioned cocktail," confirmed co-owner Josh Pape. "It'll pair beautifully with the four different varieties of sausage that we'll serve with it: smoked beerwurst, boudin blanc, Italian wild boar and lamb merguez."
All the sausages will be made in-house and served in coils along with house-made condiments. The new venue should be in effect from October 17th. To confirm: it's still business as usual at Wildebeest on the ground level.
