The Westin Resort & Spa, Whistler will be closing the doors on the Aubergene grill on September 26 for a few weeks of renovations. The new restaurant is to be called Grill & Vine, based "on a modern interpretation of the classic grill". According to a press release, the 105-seat Grill & Vine will comprise of, "... a comfortable lounge area with soft seating and long communal wood table tops. A new all day Grab & Go will be incorporated into the restaurant with Starbucks® espresso coffees and a variety of snacks to go."
Aubergene's current executive chef Bradley Cumming will stay on the team, signature items will include a Woodstone hearth oven for artisan pizzas and breads, a selection of small plates and "Simply Grilled" farm to table local BC selections. An Enomatic Wine Preservation System will be a main focal point of the restaurant offering 16 high-end Canadian and international wines by the glass.
