Iconic Vancouver Roof Restaurant Returns

The Roof at the Hotel Vancouver held a preview last night to show off their work-in-progress pop-up restaurant which should be up and running by Valentine's Day. While Griffins and 900 West are closed as part of the Fairmont's $12 million renovation to the lobby for their 75th birthday, the Roof on the 15th floor will be the hotel's restaurant and bar.

Calling it a 'gentle and respectful refurbishment' this is a return to the Roof's heyday of the 50s and 60s where it was the hottest spot in town with dining and dancing set to a backdrop of jaw-clanging views over the city and mountains. Chef Cameron Ballendine promised a retro menu of classics including prime rib and Boston bibb wedge salads. Live music will play on Thursday through Saturday and the iconic sunken bar remains - staff were shaking up old-school favourites like Hanky Pankys and Negronis and serving Moscow Mules in Cyrillic script-inscribed copper tankards - presumably the new Most Wanted But Try Not To Steal item in town.
