In a change from nose-to-tail, farm-to-table restaurants, Eater hears that the next exciting Gastown opening will be a Champagne and dessert bar. Several names have been floating around but we can confirm that the Bearfoot Bistro's Dominic Fortin is consulting on the project which means (as you'll know if you've eaten his desserts) that deliciousness is guaranteed.
