For just a few months until fall the Roof at the Fairmont Hotel Vancouver is open while 900 West gets a make-over, serving breakfast, lunch, afternoon tea, dinner - and of course - cocktails. Up on the 15th floor the view over the city and mountains is jaw-clanging. Head for the sunken bar, have them shake you up a Prohibition-era cocktail and order a steak or a Boston Bibb Wedge salad. Back in the 1940s the 'Panorama Roof' was the hottest spot in the city—with retro tunes and a Mad Men vibe the Roof could be this year's feel-good hit of the summer.
