It's Vancouver's loss and Squamish's gain as Gillespie's Fine Spirits bag their 'approval in principal' from the province to open a distillery. After two years - and some $20,000 going down the drain thanks to a clerical error regarding building codes (way to be negligent diligent, guys)- distillers Kelly Woods (La Mezcaleria) and John McLellan have decided to switch from Vancouver to Squamish as a base. They'll be opening in early June with two gins and vodkas and an 'aphrodisiac liquor'. In three years they will also release a traditional rye whiskey and a bourbon-style whiskey. [Eaterwire]
