Chef Henry Besser Rosenberg Leaving Buckstop Replaced by Chef Casmir MacDonald

It's all change over at Buckstop on Denman with chef Henry Besser Rosenberg leaving on Thursday to go traveling. He'll be replaced by chef Casmir MacDonald>. Fans of Buckstop's critically-acclaimed barbecue need not fear, the barbecue will stay the same. Owner Fiona Grieve says, "The menu is gonna be a lot more local; Cas is a farm boy from Surrey and wants us to start using more products that we source right from the farm and put a bigger West coast influence onto the menu. As there is no 'West Coast barbecue' in official culinary terms this gives us a chance to use the smoker and southern influence to play with the concept." As fall approaches, the menu will change to reflect Casmir's work with butchery and sausage making. On the cocktail side, Grieve will be using pumpkin reductions, date-infused vodka and smoked apple bourbon cider. Pear mai tais will have house-made orgeat foam.
